Feel free to book a different hotel or airbnb that's not listed! Some info on the different areas:
The French Quarter will be the most convenient area to stay in to get to the wedding, and has many small/historic/boutique hotels, as well as many restaurants and bars. If you don't want to hear noise late into the night, we'd recommend not staying directly on Bourbon Street (generally even a block away is good enough!). Hotels here tend to be pricier due to the location.
The Central Business District (CBD)/Downtown has larger chain hotels that are walking distance to the wedding, but a slightly longer walk. Staying in the CBD is generally less expensive than staying in the French Quarter, but it is also a little dead (nothing going on - which could be a good thing if you are looking for somewhere removed and quieter!). The CBD is like the equivalent of the Financial District in other cities.
Also, if you choose to stay somewhere where you will have to uber/taxi to the wedding, please keep in mind that traffic in the French Quarter can add extra time.
